There's a really good VSauce video on Youtube about how gravity would behave on a flat earth. Living near the edge would have extreme gravitational force drawing you back towards the centre. So in other words, gravity wouldn't be pulling your feet towards the floor, it would be pulling your back towards the hub. As you are drawn back, your feet would be ground along the floor, frictional effects slowly grinding your feet, then your legs and torso into something resembling burger meat.
Flat Earth is not a good place to live for organisms that have evolved with more traditional gravities, because it would also greatly affect all the fluids in your body too, but that's a subject for another time.
